魚香茄子

茄子二條
豬絞肉200g
蒜頭末二顆
辣椒末適量
香菜適量
醬油一大匙
豆瓣醬一大匙
花椒適量
糖適量
鹽適量
作法
1 把食材該切的切好。如圖

2 用低油溫炸茄子,待軟後撈起。再轉大火,用高油溫炸茄子去油。高溫約3-5秒就撈起。這步驟只是去油。

3 低油溫放入花椒炒香後把花椒撈出。用花椒油來炒菜

4 先煎豬絞肉,煎到一面恰恰翻面並且放入蒜頭辣椒末炒香

5 放入辣豆瓣醬和醬油炒香

6 加入高湯或水燉煮個二分鐘後用糖鹽調味,最後灑上香菜
